Classic 16yo (ex-Sherry casks) with a finition in Pedro Ximenez Casks
Color : matte gold.
Nose : peat oil, lightly smoked, lagoons. Hints of liquorice and raisins.
Palate : great roundness, filling the mouth with a high quality olive oil ! I feel the peat, present, but in the background. The smoke is very soft, like a fire extinguished for a few hours already. The Pedro Ximenez casks express intense notes of candied figs, chocolate, spices and, of course, wine.
Finish : a bit short, but powerful and in full effect.
Comments : wow … the character of the distillery is felt but the barrels of Pedro Ximenez soften the powerful character of 16 years while giving it an incredible delicacy ! An iron hand in a velvet glove ! This has become one of my favourite twist of a classic. Some might say the original 16yo is better, being truer to the distillery character. If you can afford both, why not enjoy both ?

I never liked vodka&orange or vodka&cranberry while going out in the Montreal Clubs. I was always drinking whisky&ginger ale or whisky&coke.
